First Fridays: Where Does Our Food Come From

Join us Friday, October 2 for a virtual conversation on where food comes from and a glimpse into the U.S. food supply chain. We look forward to welcoming Dr. Bukola Bakare, Assistant Professor at Western Carolina University, Dr. Meredith Wagner, Associate Professor/Chair, Department of Nutrition, Dietetics and Exercise Science at Concordia College & Tim Rohde, Store Director at Coborns Inc.
Prior to COVID-19, many of us were blissfully unaware of the complexities of our U.S. food supply chain. However, as headline after headline emerged showing the shelves barren of staple products, farmers forced to euthanize animals, or thousands of gallons of milk being dumped down the drain, many of us began to wonder why this was happening and what we can do to change it.
In response to these issues, businesses, organizations and individuals have pivoted their usual way of doing business. For some, this means reducing product offering. For others, it requires identifying and building new supply chains – some across the world. And for some, it means rethinking how we grow and source food, and encouraging individuals & communities to develop a more personal, resilient food system.
For our October edition of First Fridays, we are excited to welcome three speakers to share their unique experiences and expertise on the U.S. food supply chain. Dr. Bukola Bakare is an assistant professor at Western Carolina University and a former Robert Wood Johnson Health Policy Research Scholar. Her work and research focuses on operations and supply chain logistics to improve health. Meredith Wagner is an Associate Professor and Chair of the Department of Nutrition, Dietetics and Exercise Science at Concordia College, as well as the Director of the Combined Dietetic Internship/Master of Science in Nutrition program. Dr. Wagner’s courses allow students to explore ways to improve the food supply chain to promote good nutrition and better health. Finally, Tim Rohde is the store director for Coborns Inc, an ESOP company based out of St Cloud Minnesota. Coborns operates 120+ retail locations and has more than 9,000 employees. Tim has worked with Coborns and grocery management for over 30 years.
